so i have really neglected my blog over the last month and half i had all these great ideas on wrighting weekly but unfortunately that has not happend dd2 is keeping me busy so is our lil bub to be due in december m/s not the best but am nearly over that stage hopefully and have so much energy been back in the kitchen this week poor dh was doing a lot of the cooking for a while there. so this week we had

monday chicken legs and fried rice i finally made a nice fried rice been trying all sorts for ages lol
tuesday: southern style chicken chips and gravy
wednesday chicken enchiladas
thursday roast chicken baked vegies
friday using left over chiken from roast for homemade sweet chilli pizza for dh and i and a tomato and bbq chicken for dd oh and cant forget the garlic bread.

and yes i can see a patten there a lot of chicken seems to be all i feel like eating at the moment opps might try mix it up next week lucky dh doesnt complain just likes my cooking.

back from our lovely weekend getaway unfortunately it was cut a day short but all was good my daughter loved it all the animals the ducks and cows were her favourite it was so peace full and stress free i really do love the country farm life i can see my self doing it so can hubby maybe in a few years time. so whats cooking this week all just basic stuff nothing to exciting did an inventory of the meals we really like to eat and and came up with 31 regular meals so there is a months worth and with me trying to make a new meal each week there is lots of variety. this week we are having.

curried sausages
beef stir fry
beef stroganoff
lamb roast using up left over rosemary from Anzac day.
chops and vegies
homemade pie
fettuccine bosciola
home made chicken schnitzel

planning on trying to finish my cookbook this week the small first addition there will be 2 to 3 meals in each section only have 5 more recipes to write up. off to write my shopping list for the week up

where has the last month gone


ok will try this again i just did something weird to my post been a bit slack in the kitchen over the past month and to my blog aswell still cooking a storm but have had more take out been so busy have had 6 bday 3 engagement and we all been sick and i'm now on a lot of medication well a lot for me anyway for the next few days to try and cut this flu out or the doc fears i might get Phenomena that will be just my luck so the cookbook is still come just not a quick as i would have liked and i'm just going to do a small one to start with. i'm more of a main meal cook than deserts and sweets as i seem to lack an artistic streak i do love to make cakes from scratch and scone like my great grandmother and i used to as a child. we are going away for Easter to hubby grandparents place at stroud it will be good to get away even if just for to nights we have never been for a holiday except to visit the grandparents yes we never went on a honeymoon worked it instead we are very practical people if you cant guess anyway I'm rambling like i do its just me so i'm hoping to get some yummy duck eggs this weekend and maybe even some chicken if there is enough.

Wednesday hubby got pizza on way home i just had no energy to stand
Thursday dinner will be for lunch as hubby is working late so having tacos for lunch and dd and i will have stir fry out of the freezer for us two
Friday no I'm still working this one out as it is good friday thinking of doing some home made calamari and lemon fish cooked on the bbq and honey soy oysters served with a nice green leafy salad.

whats cooking this week

the weather is just terrrible here been raining for days and is a bit cool with it aswell. not much has been cooking been off with a cold had roast lamb th other night and left overs from it last night. just working ut our meals for the next week pretty basic but all very yum. we have a casserole currently cooking in the slow cooker smells delicous can wait for dinner, so on the menu we have a.

chicken sweet chilli stir fry.
Rissoles and sreamed vegies
Beef Stroganoff
Meat balls and spaghtetti
Chicken Caccitore this is a new one for me
sweet potaoe soup another newbie
chilli con carne
home made lasagne with out pasta.

currently have choc muffins into cook and my dear 2 yr old keeps asking ready mummy.

Chicken and corn noodle soup

so its a little cool here to day and i'm not feeling the best so decided to make some chicken and corn soup loved having mums as a kid.

chicken corn noodle soup

ingredients:
200g chicken thighs
2 cups of chicken stock
salt to taste (i don't cook with salt much)
1 onion finely diced
1/12 cups frozen corn or a tin of corn i used a tin today can be creamed corn to.
spaghetti as much or as little as you like.

method
put 2 cups of chicken stock in a lge put cover and bring to boil mean while dice the chicken up into small pieces. once stock has come to a boil reduce to a simmer and place in chicken corn salt and onion cover and simmer till chicken is cooked will cook quicker if pieces are small. once chicken is cooked place in spaghetti i brake min into 3 places so that i have small noodles turn stove of and leave on hot plate until noodles are cooked. if soup is to watery for you mix half a cup of lukewarm water with corn flour till you have a lump free paste mix into soup to make thicker you can repeat this process as many time you like to ensure you have the right consistency of the soup.

alternative if you have a slow cooker place all ingredients and only 1 1/2 cups of stock in cooker and place on low and cook for 6 to 8 hours.

for that extra zing and to give a oriental feel place 1 tablespoon of soy sauce in soup mix while cooking.
